blueberry pancakes.....

When fresh blueberries are not in season, frozen blueberries are a good alternative. To make sure that frozen berries do not bleed, rinse them under cool water in a mesh strainer until the water runs clear, then spread them on a paper towel-lined plate to dry. If you have buttermilk on hand, use 2 cups instead of the milk and lemon juice.

INGREDIENTS
1 tablespoon lemon juice from 1 lemon
2 cups milk
2 cups unbleached all-purpose flour (10 ounces)
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 large egg
3 tablespoons unsalted butter , melted and cooled slightly
2 teaspoons vegetable oil
1 cup fresh blueberries or frozen blueberries, preferably wild, rinsed and dried
DIRECTIONS
Whisk lemon juice and milk in medium bowl or large measuring cup; set aside to thicken while preparing other ingredients. Whisk flour, sugar, baking powder, baking soda, and salt in medium bowl to combine.
Whisk egg and melted butter into milk until combined. Make well in center of dry ingredients in bowl; pour in milk mixture and whisk very gently until just combined (a few lumps should remain). Do not over mix.
Heat 12-inch nonstick skillet over medium heat for 3 to 5 minutes; add 1 teaspoon oil and brush to coat skillet bottom evenly. Pour 1/4 cup batter onto 3 spots on skillet; sprinkle 1 tablespoon blueberries over each pancake. Cook pancakes until large bubbles begin to appear, 1 1/2 to 2 minutes. Using thin, wide spatula, flip pancakes and cook until golden brown on second side, 1 to 1 1/2 minutes longer. Serve immediately, and repeat with remaining batter, using remaining vegetable oil only if necessary.

FEET! TRY IT!

  • 1 cup milk
  •     Sugar or salt (either will work)
  •     Baby oil, sweet almond oil or coconut oil
  •     Pumice stone
  •     Stridex, found in the acne section of any drugstore
  •     Thick moisturizer or a salicylic acid cream
  •     Socks
 Here's How:
1) Soak feet for 5-10 minutes in a warm foot bath made with 1 cup milk and 5 cups warm water.
2) Create a homemade foot scrub by putting 4 tablespoons salt or sugar in 1/2 cup oil. Baby oil, sweet almond oil or coconut oil or even vegetable oil works well.
3) Massage the homemade foot scrub in a circular motion into bottoms of feet.
4) Scrub bottoms of feet with the pumice stone. Rinse and dry feet.
5) Before you go to bed that night, t rub a Stridex pad over dry areas of feet. Stridex, a product found in the acne section of any drugstore, contains 2 percent salicylic acid so it's a great exfoliant for the feet.
6) Apply moisturizer thickly on feet (do not wash off Stridex). A super-rich moisturizer like cocoa butter, Eucerin (my favorite) or even Vaseline works best.  For even better results, apply a thin layer of ,an OTC salicylic acid, on your feet along with a dollop of Vaseline.
7) Pull on socks and keep them on throughout the night for at least 4 hours.

Prom and MOM

Ahhh just 3 more weeks until her PROM! EEEK. I remember when I brought her home. I just smile because we've grown and learned so much together. I was a loner until I met her mom. She changed so that changed me. NEVER would I imagine me being a dad.....My now ex-wife is no where to be found. I hired a private detective in 2009 but no luck.
So I am mom and dad! Happy early Mother's Day to me.

A new chapter, I've started all over again. My ex-neighbor gave me her daughter to raise. She felt she was a bad mother. All her adult life  she wanted to be a party girl. She got a chance at her dream when she met the party promoter. The only catch was she couldn't bring her only daughter along for the ride. Her mother and grandmother are now too old to raise children. I don't mind at all. I"ve know my new daughter since she was about 4. And my daughter is excited to have a little sister.
